Chicken and Veggie Soup

Simple Chicken & Veggie Soup

Ingredients:

  • 1 yellow onion chopped

  • 1 red (or any color) bell pepper chopped

  • 3 large carrots chopped

  • 1 cup kale roughly chopped

  • 1 clove garlic minced

  • 1 lb of boneless, skinless chicken breast (previously cooked and shredded)

  • 4 cups of bone broth (I like Bonafide Provisions and Kettle & Fire, or make your own)

  • 1 tsp of ground tumeric

  • Dash of salt and pepper

Saute onion, carrots and peppers either in an Instant Pot until soft - 5 - 7 minutes.  Add in garlic and saute another 1 minute. Pour in bone broth, add in salt, pepper and tumeric and cook on high pressure for 7 minutes. Do a quick pressure release and then add in the shredded chicken and the kale. Put the lid back on for a couple of minutes until the kale has wilted. Pour into bowls and enjoy!
